CROCKPOT CHICKEN CACCIATORE




Ingredient:
6-8 skinless chicken thighs or breasts--can be frozen
28oz crushed tomatoes
1 white onion -large chunks
1 green pepper -large chunks
3/4 cups cut carrots-optional
4 oz. chopped mushrooms
4 cloves garlic -chopped

1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/4 teaspoon red pepper flakes
1 cup chicken broth
1 tablespoon sugar
Salt & Pepper

DIRECTIONS
Place half of the tomatoes, onions, peppers, garlic, herbs, red pepper flakes, sugar, and broth in the crockpot.

Add chicken thighs or breasts, then top with remaining ingredients. Salt and pepper to taste. Cover and cook on LOW for 4-5 hours. Or HIGH 3-4 hours, until chicken is tender. Remove lid during last hour to let sauce thicken up.
Serve with your favorite pasta.
